Cranberry Apple Sausage Stuffed Turkey Breasts with Harvest Applesauce

The other day when I was walking through the grocery store I saw my inspiration for this dish. A cute little box of cranberries that were just asking me to use them in a new recipe. I had never cooked with cranberries before.

Cranberries go great with Turkey… so this is what I came up with. Serve this dish with a side of squash or sweet potatoes. You could make this for Thanksgiving if you were having a small dinner party. The filling would be super tasty in pork as well!

1 7.5 oz package of fresh cranberries

1 apple (fuji) peeled and chopped

1 cup sausage

1/4 cup red onion

1/2 cup walnuts

3-4 turkey cutlets

1/4 cup fresh parsley

1/4 cup honey

salt

Place cranberries in a pot of water and bring to a boil. Cook just until the cranberries burst. Remove cranberries from pan reserving some of the juice made from the cranberries.

Add chopped apples to the cranberry juice and bring to a boil. Reduce heat and simmer until apples are cooked. Mix 1/4 cup of the cranberries into the apples. (You don’t want to use all of the cranberries). Add honey into the cranberry apple mixture. Brown sausage in skillet. Add onion and cook until soft. Mix parsley and chopped walnuts into sausage mixture.

Place turkey cutlets in plastic storage bag with a tablespoon of water and pound out with rolling pin or meat mallet until turkey breast is 1/4 inch thick.

I then cut my turkey breasts in half lengthwise to make four long skinny pieces. Pile filling onto turkey breast and roll up starting at the smallest side. Secure with toothpicks. Brown in pan on all sides. Bake in 350 degree oven for twenty to thirty minutes.

Harvest Applesauce

1 apple (fuji) peeled and chopped

3-4 Tbsp cooked cranberries

1/4 balsamic vinegar

1/4 cup honey

Place all ingredients into saucepan and bring to a boil. Reduce heat and simmer until apples are cooked and sauce thickens. Serve over Cranberry Apple Sausage Stuffed Turkey Breasts.
